INGREDIENTS
(DOUGH, makes 2 pizza bases)
- AP flour 2 cups
- Salt 1/2tsp
- Instant yeast 1tsp
- Warm water 3/4th Cup
- Sugar 1tsp
- Olive oil 2 tbsps. for adding in between, 1 for greasing
- Water 2 to 3 tbsps. or as required for kneading
(CHICKEN, for 2 pizzas)
- Chicken breast 1 big (Boneless, cut in small cubes, 1/2 inch big)
- Salt to taste
- Black pepper 1/2 tsp
- Red chili powder 1/2tsp
- Peri Peri sauce (garlic flavor) 1tbsp
- BBQ sauce 1tbsp
- Vinegar 1tbsp
- Olive oil 1tbsp
(TOPPINGS for 2 pizzas)
- Pizza Sauce 6 tbsps.
- Capsicum 1 big (thinly sliced)
- Onion 1 medium (thinly sliced)
- Fresh mushrooms 7 to 8 (thinly sliced)
- Cheddar cheese 2 cups (shredded)
- Mozzarella cheese 2 cups (shredded)
- Basil and Oregano leaves for sprinkling.
- Butter & flour for coating and greasing
METHOD
- Add instant yeast and sugar to the warm water. Mix well and keep it covered for 10 minutes to activate yeast.
- In a mixing bowl combine flour and salt. Make a well in between and after 10 mins add the yeast mix to it. Mix it well with a wooden spoon.
- Add olive oil and mix some more.
- Sprinkle some flour on a clean slab and pour out the batter for kneading it with hands.
- Knead well while stretching the dough for a good 5 mins at least till it gets smooth. You can keep sprinkling flour a little at a time. Make a round ball.
- Grease the bowl with olive oil. Grease the dough ball and set it aside, covered with a damp towel in a warm place for at least 2hrs.
- Sauté chicken cubes in olive oil. Add all spices and sauces in it. Mix well and let it cook till its water dries completely.
(ASSEMBLY)
- Grease &flour the pan.
- Cut the dough ball in 2 equal halves. Roll out each half into an evenly flat base using a rolling pin.
- Spread the base in the pan and poke it all over using a fork.
- Smother pizza sauce.
- Add cheddar cheese first so it holds the rest of the toppings well.
- Add chicken cubes.
- Add vegetables.
- Add mozzarella cheese.
- Sprinkle oregano and basil leaves.
- Bake in a pre heated oven for 25 mins at 180°C.
Serve hot with garlic powder and red chili flakes 💖💖
You can also drizzle hot BBQ sauce on top too.
