Egyptian Koshary

Its the national dish of Egypt and widely popular as vegetarian street food with amalgamation of Indian, Italian and Middle Eastern culinary elements inside. It stole my heart the moment I took it’s first bite at one of the roadside restaurants in Dubai.

INGREDIENTS

(TOMATO SAUCE)

  • Tomatoes 1kg (blended with a tsp of sugar)
  • Cumin seeds 1tbsp
  • Coriander powder 1tbsp
  • Ginger Garlic paste 1tbsp
  • Salt and pepper to taste
  • Cayenne pepper 1tbsp
  • Bay leaves 2

(KOSHARI VINEGAR SAUCE)

  • Water 2 cups
  • Cumin powder 1tsp
  • Coriander powder 1tsp
  • Salt
  • Red chili powder 1/2tsp
  • Red Chili flakes 1/2tsp
  • Ginger Garlic paste 1tsp
  • Lemon juice 1tbsp
  • Vinegar 1tbsp

(FRIED RICE)

  • Rice (preferably short grained or Egyptian if available) 1.5 cup, soaked for an hour.
  • Stock cubes 2 or 1 packet.
  • Salt
  • Oil (the same used for frying onions)

(CRISPY FRIED ONIONS)

  • 3 big sized
  • Flour 3tbsps
  • Oil 1 cup
  • Boiled Brown lentils 1 cup
  • Boiled chickpeas 1 cup
  • Boiled Macaroni 2 cups

(TOMATO SAUCE)

Cook all the ingredients of the sauce altogether till the sauce thickens and forms a paste like consistency.

(KOSHARI VINEGAR SAUCE)

Mix all the ingredients well and keep aside.

(CRISPY FRIED ONIONS)

  • Coat thinly sliced onions with flour.
  • Heat oil and fry the coated onions until golden in color and crisp.
  • Take them out on paper towel and let them cool down.

(FRIED RICE)

  • Add the strained, soaked rice in the heated oil and stir fry till they start turning a little crispy and golden.
  • Add stock cubes and salt to taste.
  • Add almost 2 cups of water or as required and cook till done.

(LAYERING)

  • A layer of rice
  • A layer of macaroni
  • A layer of brown lentils
  • A layer of chickpeas
  • Dollops of tomato sauce
  • Pour in the koshary vinegar
  • Add lots of crispy brown onions

Serve immediately or it will start turning soggy.
