Chicken Quesadillas

The most fun thing about this recipe is that you can make these with your kids without having to worry for the mess. Comes together really quickly and is an ideal fix for days when you don’t want to make too much effort on serving a homemade meal to the fam bam.

INGREDIENTS

  • Chicken Mince 450g
  • Tortilla Wraps 8
  • Bell peppers (yellow and red, med sized) 1 each, chopped small
  • Sweet Corn 3/4th cup
  • Spinach (optional) 3/4th cup boiled and drained
  • Tomato paste 2tbsp
  • Cheddar Cheese (shredded) 1 Cup
  • Mozzarella Cheese (shredded) 1 Cup
  • Olive oil for brushing
  • Spices to be added according to taste (Salt, Red chilli powder, red chilli flakes, paprika, white pepper, black pepper)
  • Ginger Garlic paste 1tbsp
  • Oil for mince 3 tbsp

METHOD

(For mince)

  • Heat oil in a pan and add GG paste. Sauté for a few seconds before adding mince.
  • Cook the mince for a minute or till its changes color.
  • Add spices and mix them well.
  • Add tomato paste and mix well before adding the vegetables. Mix them all well.
  • Add 3/4th cup of water, cover and cook on high heat till water is absorbed and mince is done. Take off the heat.

(For Quesadillas)

  • Preheat a frying pan on med high heat.
  • Take a tortilla wrap and brush olive oil on one side (the side that will stay out). Flip and put the stuffing on one half of the wrap (mince first, then cheddar and then mozzarella cheese).
  • Fold the other half on top. Pick it gently with hands from the opening and place the folded wrap gently on the heated pan (cheese side down).
  • Grill each side evenly but quickly by pressing the wrap down with a spatula or any flat utensil. Pressing is important or else it won’t bind well and stuffing will fall out.
  • Keep flipping till its evenly grilled golden on both sides. Tortillas burn very quickly so please stay around during this.
  • Take off the pan and slice each folded wrap into 3 triangle shaped pieces.
  • Serve hot with Salsa or any sauce of your choice. My favorite is Cholula hot sauce made by Jalapeños Peppers.
