  • Bone-in chicken wings (or any cut of your choice) – 1kg
  • (Marinade) Salt-1tsp, black pepper-3/4th tsp, red chili flakes-1/2 tsp, lemon juice-1/4th cup
  • (Coating) AP Flour-3/4th cup, paprika powder-1 tsp, garlic powder-1.5 tsp, dried parsley-1 tsp
  • Olive oil 3-4 tbsp, or as required
  • Unsalted butter – 1/2 cup
  • Chopped garlic (fresh/fried) – 2 tbsps
  • Stock – 3/4th cup
  • Lemon juice – 3 tbsps
  • Dried parsley for garnishing

1. Marinate chicken wings with salt, black pepper, chili flakes and lemon juice. Keep it aside for 15-20 mins

2. Prepare coating mix by adding Paprika powder, garlic powder and dried Parsley to AP flour.

3. Coat chicken pieces & shallow fry them for 6-7 mins each side (if bone’s in) or as required, until done.

4. Take them out in a plate.

5. In the same pan & remaining oil, add unsalted butter and let it melt.

6. Add fried/fresh chopped garlic and stir for about a minute.

7. Add stock and let it simmer until it starts to thicken.

8. Adjust seasoning to your requirement.

9. Add fried chicken back to the buttery gravy and let it cook for 2 minutes. Keep Tossing so chicken pieces get super coated with the yummy masala.

10. Add lemon juice and mix.

11. Sprinkle some more dried Parsley and serve.

Goes best with boiled rice and salad on the side
