Pasta in Red pepper sauce

Chicken and cream both are optional ingredients. I’ve made it many times without them, tastes amazing nevertheless.


  • Chicken Boneless cubes 500g (optional)
  • Red Bell pepper 2 big
  • Onion 1 medium
  • Garlic cloves from a whole bud
  • Spaghetti 1 pack
  • Olive oil 3tbsps
  • Salt, crushed black pepper to taste
  • Broth/stock 1/2 cup
  • Heavy cream 1/2 cup (optional)
  • Lemon juice of 2 big lemons
  • Freshly grated parmesan cheese for sprinkling
  • Fresh chopped parsley/coriander for garnishing

  • Dice onions and bell peppers, and add them to a blender jug along with garlic cloves and some water
  • Blitz them all together till everything is well blended into a sauce.
  • Chop chicken into medium chunks. (I mistakenly got bone-in wings therefore, i made stock out of the bones. You can use any kind of broth/stock readily available to you).
  • Boil spaghetti to al dente and save some pasta water while boiling for later use.
  • Add oil to a deep pot and stir-fry chicken in it.
  • Add salt & crushed black pepper seasoning to it.
  • Dish out chicken on a plate and in the same pot, add the blended red pepper, onion sauce.
  • Pour in the stock, mix and allow it to simmer on medium flame until it reduces to half.
  • Add back the stir-fried chicken chunks followed by pasta water. Mix well
  • Now is the time to add creamy texture to the sauce by pouring in the cooking cream. It is also the part where you check and adjust seasoning levels.
  • Add boiled spaghetti to the creamy sauce and toss it really well until each strand gets super coated with the delicious goodness of red peppers, onions and garlic.
  • Squeeze lots of lemon juice on top.
  • Serve with a generous sprinkling of freshly grated parmesan cheese and fresh parsley.

You can additionally use red chili flakes inside the sauce or Sprinkle on top if you need the heat in your pasta. It also tastes delicious that way.
