Lemon Garlic Spaghetti

Lemon Garlic Pasta (Vegetarian)

Servings: 4-6

Preparation Time: 20 minutes

Cooking Time: 15 minutes

Level: Beginner

INGREDIENTS:

– Spaghetti 1.5 packet

– Olive oil 2 serving spoons

– Chicken stock 1cup (I boiled 2 stock cubes in 1 cup water)

– Parmesan cheese 8tbsps (or more if you want it cheesier)

– Garlic cloves 8-10 chopped finely

– Milk 1 cup- Freshly ground black pepper 1.5-2 tbsps.

– Fresh Parsley lots and lots of chopped finely

– Red chili flakes 1tsp

– Lemon zest of 1 giant lemon

– Lemon juice of the same giant lemon

METHOD:

– Boil spaghetti in salted water Al dente (save a cup of pasta water before draining. (Don’t rinse your spaghetti. Don’t use oil while or after boiling)

– In the same pot, add olive oil. Heat it a little and then add chopped garlic to it. Sauté till light golden

– Add chicken stock as garlic changes color. Mix well.- Add milk, mix and let it simmer for 3-4 minutes.

– Add boiled pasta to it along with the saved pasta water.

– Add ground black pepper, chilli flakes and parmesan cheese altogether. Toss it well so every bit of pasta gets coated. Let it cook for a couple of minutes or until the sauce has evenly coated pasta and no liquid is seen behind.

– Add chopped parsley, lemon zest and lemon juice. Toss it some more till its well mixed.
